I normally have a $1000 minimum on Saturday night dinner parties or a $2000 on weddings. I will require a $5000 minimum for NYE99

If I could not get much staff, I would definately do pre-paid pick ups. You certainly should pay your staff triple pay at least!!!! Just as a good jesture... and bill that to the client, dont absorb it......

Someone tried to book a mid-scale hotel that I recently took over the banquet services....they wanted NYE99 for 50 ppl.... the room holds 300.... I said, "sure, if they are willing to spend 5000.00, well, needless to say, that got rid of them...., fine, I will wait, some one will pay, or I will stay home....

Understand, I am not price gouging.....I simply require a very high price menu for that night... no skimping!!!!
