All my staff have other jobs and work for me on weekends. I pay them very well but, I expect them to be the very best of the best.

Bring in new staff early in the year and work them off and on to give you a greater selection when push comes to shove.

As for bookings, I have worked hard to come up with a fair pricing for my clients and at the same time I have made sure that I make a good profit for the New Years Eve Event. I will take three bookings only. One in my facility and two outside (no house parties for this night)

Make sure to tell your clients that your costs are greater that night and they don't seem to mind paying the extra.

: I am an off premise caterer.I have 3 functions booked for 21/31/99, would like to take more, and most of my regular staff don't want to work or else they don't want to commit almost 1 year out.(Can't really blame them) I am paying double the regular rate. I don't really think it's a money issue.Although $50 instead of $30 an hour might do it.?!?
