I think it would be a good line to say "I spent 12,000.00 with you last year and you are nit-picking over a seafood platter that is 300.00"! Say it with tongue in cheek and give a little giggle when you say it! I many times say "Oh, you are looking for a 5.00 reception and you are calling me for my advice....let's see should I recommend Kroger's or Walmart's deli.... hmmm, that is a hard call.."
" A top notch reception such as the ones we create will start at 1500.00.... uh, we did one last week for 7500.00 and two weeks ago we did one for 1600.00 both were nice, for around 3000.00 we can create a spectacular reception, Does that sound like a good place to start, Ms. Smith??"

Main thing to remember Donna, is everyone who calls cannot afford to hire a caterer, so be nice, but tell them like it is...!!! They will pay or they will go to Walmart!

It's funny to see them show up as a guest at one of my parties in the future, then see their mouth drop open when they see our tables and taste our food!
