When I prepare large quantities of rice, I use converted rice (it has been partially cooked) and I use a ratio of 1lb rice with 1 quart of liquid. I add the rice to the boiling liquid, bring it to a boil again, and then cover and let sit for 20-30 minutes without the burner on. This lets the rice steam to a perfect doneness.
With large batches you would definitely want to measure the rice by its weight as opposed to its volume when determining how much liquid to use.
I would also recommend using chicken stock and possibly some white wine to enhance the flavor of the rice.
