There are those who do strictly vegan/vegetarian. Those are usually so specialized that the are in huge metro markets. Otherwise you may not have enough demand. I would be careful being too limited.
Rather, offer vegan menus as a part of your catering service. This allows you to serve what ever the market wants and you can have multiple menus.
If you are wanting to know what to serve for vegans, consult local bookstore for numerous books on the subject with recipes.
