Unless I misread, you are serving one and one third, not two thirds..... so which is it?
: From Experience i have learned that a minimum of 1 and 2/3 servings per person. If I have need two desserts for 100, I have at a minimum 66 of each. I also calculate what kind of group it is, if it is an all women group then I need more, men and women 1 and 2/3 is enough. For more kinds of desserts, you need to increase the proportions some because you don't want to run out of any one thing to fast. Some Items go faster, i.e. chocolate, than others. For dessert buffets it is a good idea to serve smaller portions, there by the 66 servings above can become 132 servings.
: Figure out what will be the most popular item and weight the amount to that item.
: Ultimately you must price it so you can provide more than enough food. Nothing is more embarrassing for you and you client than running out of food before the function is over.
