First of all, would like to say that I'm enjoying your forum and have found it very informative. I am a fourth term culinary student and am interested in entering the catering field. I've been working p/t for a silver service off premises caterer since March which has, to say the least, been extremely "enlightening"....I really have a love/hate relationship with my job. When it's good, it's really good...and when it's bad, it's really bad! Anyway, my question deals with portion sizes. I am working on a school project, planning a buffet for 100 persons. I have a little background on portioning, but am confused as to the size of the portions when your buffet has 3 different entrees, 4 salads, 2 soups, fruit/cheese platter, etc. What is the average ounce size per portion when there are many to choose from? I apologize if this is a stupid question....I searched the archives, but didn't find anything that specifically addressed ounces in relation to portions. Any help would be appreciated. I have a small corporate luncheon to cater in Dec. and plan to use my project as a guideline, so I want it to be as accurate and realistic as possible. Thanks in advance.
