I have been in the restaurant business for 30 years and have done some catering in house and at outside venues and am now in the process of building a separate catering facility (seating 250), I was wondering what pieces of equipment would be considered the heartbeat of a catering kitchen and if anyone has had any problems with equipment from specific manufacturers
