In my experience, bitterness in fish can be helped by soaking the thawed and well drained fish in whole milk over night. This is also helpful with strong flavors in chicken or fishy-ness in fish.
Please give this a try and let us know if it helps!!
If not, maybe you should share with us how you are handling and preparing the fish. Perhaps we can see an error there.
