Contracting Service vs. In-House Employees

Greetings fellow caterers-
We're thinking of structuring our service department via an independant staffing company. Obviously it would help us save on payrole taxes and insurance liabilities...but are we potentially sacrificing quality? Have any of you ever contracted outside help for off-site catering? Any insight would be most humbly appreciated.
