Establish standards that can be easily measured.
Food cost %
Labor cost %
Customer Satisfaction, some function of complaints per customer.
Sanitation, Health inspections (this must be stellar)
Set levels that are obtainable but not easy.
Set them as quarterly goals that are paid biannually.
After the first year if the goals are met set multiple levels where compensation is such and such at this % but more at this %.
It is imperative that the bonus program is tracked and payed in a timely manner. If The person due the bonus has to pursue it then damage to the relationship occurs.
