Design a popular menu.
Buy in bulk anything you can, stock your own pantry and mark it up. 10 meals at $220 minus 30% food cost(mine is 25%) and keep track of your time, thats your $hr.
I estimate $40-50 hr on most of our jobs, your clients would probably ask Mrs Smith next door if she'd do it for $15hr and she'd say YEH!

Maybe they don't want to buy it all.
We buy a lot more than we need for a job, cook it all and freeze the extra or freeze raw what we can for the next job.
If you write a popular menu (lasagna or beef bourgignone type things for example) you can assume the next client will order it.
You can get a new chest freezer for less than $200.
I just made cassolet for 20 people, no-one ordered it but someones gonna get it, til then its frozen.
Are you thinking like an employee instead of a businessman ?
I still do that after 16 yrs in business.!
