I just wanted to email you and introduce myself. I found your comments on the catering bulletin board very insightful, helpful, and blunt when needed. I (like hundreds of others) have been toying with the idea of opening a catering business one day. I have a 7 year background in foodservice (serving to cooking). I received a BA in Literature, and am currently selling office equipment....argh. My dream of catering keeps me motivated to earn money to return to school. Before I chase this most difficult catering dream, I am going back to receive my Culinary Arts degree. I will also take business management classes. Getting to the point...I was wondering how long you trained through school & experience before venturing out on your own. My biggest fear is going into this unprepared. I'd appreciate any reflections you'd care to share. I have it in my heart, but am still working on my head.
