I make vegetable bundles - sauteed veggies wrapped in large wontons - for my personal chef clients. After assembling them in a muffin pan, I spray them with Pam and bake them. They stay crisp after reheating. You could pre-make what you want to and then reheat them in the oven at the event, couldn't you?
