I would do about 12# (or a little less since it is just one hour) of assorted cheeses & appropriate fruit garnishes, as for the crudites I would cut 4 bu broccoli, 2 hds cauliflower, 5# carrots, 3 stalks celery, 6 green peppers, 3 colored peppers (red, yellow or orange or mixture), 1# radishes, some quartered large button shrooms, a couple each of zucc & yell squash, a few sno peas for contrast and cherry toms.....a nice spinach or peppercorn dip or champagne vinaigrette or spicy mustard sauce or a warm crab or clam dip or sun dried tomato pesto or sun dried tart cherry pesto.............just my thoughts......Sam
