I am scheduled to cater a wedding of 100-125 for a friend (yikes). Although I've done events before, they've never been this large, and never full-course meals.
How do I price a buffet dinner such as this? Buffet-style would certainly be more costly than a sit-down dinner, considering that I would need to provide more food for buffet style, right? The menu will be something basic like chicken, some sort of beef, 2 or 3 vegetables, rice and potatoes.
