a recipe for a basic brown marsala sauce is: shallots & garlic & shroom trimmings sauteed in clarified butter, when lightly carmelized deglaze pan w/ marsala wine & some red if you wish, reduce by 1/2, add to prepared demi glace, reduce & strain & serve over brisket.....sam sears, cec
