Depends on is this the entire foodservice for the event or are the apps just prior to a meal?,,,,for a cocktail reception I would do 10 - 15 pcs per person total, OR if just prior to dinner figure 5 - 7 pcs per person total per hour prior to dinner, just my thoughts.....sam
