We use about 200lbs. of potato salad per week and for years have used a dicing attachment on our buffalo chopper- boil - chill -peel-dice and your ready to mix. when you run the spuds thru, you can only put one on the tray at a time or they will mash against each other-but using the machine you can run 50lbs in no time and get the consistency you need.
