We use @200 lbs of potato salad per wk and have always had great success using a dicing attachment on our buffalo chopper. Boil, chill, peel,dice and you're ready to mix. You have to run the potatoes thru one at a time or they will mash against each other, but you can run 50 lbs in no time and will get the consistency you want-there are several different grid sizes available for the attachment
