Mine is the turnip rose.
I use a mandoline and slice a peeled turnip into very thin slices. I soak in warm salted water. Start with one piece, roll up and keep adding pieces around this center piece, fanning out as you go. When you have the rose as big as you want it, use toothpicks and run through the bottom. This will probably take about 8-10 toothpicks. Sometimes I dye these yellow or pink with food color. I use the white and green lettuce (escrole I think) as a base for the turnip roses. They are beautiful. Hope ya'll will share your ideas. I have many more.
