I assume you are referring to "Poi", fermeted taro root, that many native hawaiians use as a condiment or side item, most of us in the mainland would need an acquired taste to eat very much, I believe that 1 oz/ is sufficient.....as for the papaya seed dressing, you can get papaya in glass jars at many local stores and use the puree to make a vinaigrette or emulsified vinaigrette dressing, hope this helps........sam sears, cec......many years ago I got poi from a company in hawaii called "the poi company", that sells many native products & ships everywhere, good luck......sam
