I'm not sure it does make sense, it sounds like you are curious and interested but not commited. You won't do it well without sacrifice as its not something to be taken lightly like selling soap-a-dope Amway door to door.

You don't own a food business... it owns YOU.
I don't mean to sound abrupt but it sounds like you're asking people in a business who routinely work 80+ hrs every week to explain the ins and outs for your curiosity sake...but bear in mind that you do a lot of travel and can't get too involved.
This might explain the overwhelming lack de response, but should you go out, do some legwork , get a couple of jobs then come back with direct questions (help I need a recipe) I think you'd see a lot of people trying to assist you.
Its a question of commitment.
