I'm just starting out as well, and I find that I give people the option of paying for the cost plus an hourly rate for preparation and serving. $20 an hour for basic, $25-30 if it's something more tricky and $40-50 for something like a wedding cake decoration. It's worked out so far. I give them a list of ingredients before time and an estimate of time. No one has quibbled yet.
