As with all cooking the equipment needed is determined by the items to be cooked. That said you also have to consider where are you going to cook the FINISHED product, on site or in a commisary and transport it ready to eat?
Are you going to use the clients plates, forks et all or are you going to provide them or rent them?
What about tables, chairs, cloths etc?
Thinking about these things (and dozen others) will help you need for your individual needs.
