Check out the Catering Resources on the UNLV Tourism and Convention Dept website. Go to the Site Guide for an index. There are pages on catering resources, caterers, catering suppliers, a catering bibliography, publications, associations, venues, etc., etc. UNLV also maintains a catering listserver.
