As I have said before, the catering business is very complex and is not a business to jump into just because you know how to cook.. I can recommend that it would be best for you to go to work for a reputable cateing company to learn the ins and outs of this business... No one can tell you how to be a caterer if you are not... Now I think we can share many ideas with one another.
I have been a caterer for many years, but I still learn from other caterers. My top source for ideas and information is the Catersource Journal by Mike Roman. (www.catersource.com) If you are an up and coming caterer, I would recommend that you do whatever you can to attend the Catersource Conference in Las Vegas, January 12-15... I attended last year and it was the best thing I ever did for my catering company!
I don't work for them, but they have helped me so much thru the conferences, seminars and the valuable journals that i feel that i owe something back to them.
The best thing about the conference is the networking with other caterers and the chance to hear and share great ideas....
