I guess it depends on what you're doing. At least 90% of the items we prepare at my restaurant don't use *any* dried seasonings, unless you count a small amount of salt (but I don't use a generous hand with that). Even 5% of COG seems high for my purposes. Fresh herbs I price out in COG.
