No, retained earnings are the things you do for free that will result in a profit later. I don't low ball. Period. I ask my clients how much they want to spend on an event and then I write the menu accordingly.

Beats me, Gerard. Can I move to England with you? Why don't you want to use an agent? I'm sure that you could handpick the one who would best serve your interests and who would have a client list of suitable buyers.
