O.K., here's one for the "fusionists". I am catering a Scotish/Irish wedding dinner buffet Aug. '98 in New Orleans. (THINK HOT!!!) So far I'm planning grilled whole rib-eyes with Irish whiskey sauce, smoked salmon, cheeses, an assortment of gaelic breads- well, you get the idea. But I need more than just glorifided sandwiches! Does anyone have any recipes for gaelic foods that would be good for a buffet AND appealing in hot weather AND could be spiced-up a bit to suit local tastes??? Help!!
