I would work for them for salary and benefits plus some type of incentive and/or commission package. I have no idea what the going rate is.
A savvy chef friend of mine said if I ever took a chef job for less than $625 a week she would beat me with a stick. So that's $32,500 base salary (plus incentives) minimum in my location for a restaurant chef, but what about a caterer with a following? I'd imagine a catering chef would make less than a restaurant chef, but greater incentives because of the client list???
