Do you have to make pizza dough? I know it is better, but when you multiply it so much, you just cannot physically
handle that much dough without heavy duty equipment. I would buy
a great quality frozen pizza from "Sysco"

As far as meatballs, why would you cook them in a large pot???
Cook them on sheet pans in the ovens, they will hold well in Cambros (insulated holding cabinents)
Cook your sauce in a Pot, but pour sauce over meatballs.

So, where are your other questions? When you ask, make sure you give us
the conditions of the kitchen, what kind of equipment, refrigeration is there.
