I am trying to find someone who has purchased or used "The book of Yields" Manual or CD-ROM. It shows tables of equivalents of weight to volume yields for many foods. Is it extensive? comprehensive? user friendly? include items like tofu,tempeh, or seitan? does the CD-ROM work for both MAC and PC users? Can the data be imported into other food costing software?
What do you chefs out there think of such a manual?
