optimize your opportunities for advancement with schooling, but don't assume its a substitute for training if you want to develop the required skills.
School educates and imparts knowledge but training gives you the skills to do the things you learned about in class. 2 different disciplines.
If you want to be an executive chef then get as much school as possible and continue with re-certification.
If you seriously plan to own then certification isn't necessary, in that case you'll need some business knowledge.
So a LOT depends which end of the culinary world you decide to work in.
