i graduated from the rest school in 1983 and now own my own restaurant. i have an apprentice from the restaurant school and some of the things that i hear from him are ammazing. the chefs as a whole are very un proffessional as teachers. when the student asked if his project menu could be about progressive american cuisine the chef replied "get a life". the school is looking for money and not to produce great chefs.
full time students only go to school three days a week. i thought full time would be five days eight hours. equipment is old, antiquated and never there when you need it. but just remember.... you get out of it what you put into it. write back or e mail me for further info. will be glad to help!
