With no real experience in the field what are you using as criteria for judging the class?
Kumps is a good school but again the best school in the world is a school and not what you're going to encounter after graduation.
When we get get culinary grads as beginners its a safe bet that they have knowledge but the only thing that counts is what you can do. So its back to the beginning again, also very often you get taught and exposed to one way of doing things and your chef doesn't want it done that way, again its back to the beginning.
But thats life.
The best way is get into a kitchen BEFORE picking a school.
