I say to each his own! You only learn if you are ambitous enough to learn. I started out cooking...I went to cooking school in Toronto and quickly realized that school did not prepare me for a real kitchen. I had to start from scratch and learn everything. Then I reached pastries...and did the opposite. I learned all I could from any pastry chef I could associate with and learned everything else on my own time...reading and experimenting at work and at home. I reached a point where I thought I ought to go to school to fill in the gaps I thought I had missed out on....so, i took a four month advance pastry course,but it turned out the insructor got to learn more from me than I did from him. I turned out I had taught myself everything this course hed to offer and more.(good thing work paid for it not me)

The point of the story is if you can think for yourself...in this industry, you don't need a school to tell you whether or not you can make it in this industry. As far as I can see, the ambitious ones go as far as they want while the rest wonder why they are always looked over for promotions. School won't make you a success, only you can!
