I work in the Human Resources department for The Pier House Resort in Key West, FL. The property has three restaurants, ranging from bistro to fine dining. Our Food and Beverage department allows cross training between the restaurants. We support externships from culinary schools as well as hire people with little experience who have a positive and inquisitive attitude. From my experience here with our Food and Beverage Director and Chefs, they ARE interested in hiring people who are willing to pay attention, listen and watch, and learn from them. Not only does it train the staff to produce consistency, but there are fewer habits learned from other chefs that they have to dispel. Plus, it is flattering to ask anyone to teach you their specialty. So hang in there and look for a position in a restaurant or hotel where they promote training and advancement from within. FYI: At our resort, the two highest positions in our kitchens are held by chefs who did their externships from culinary school with us years ago.
