Sorry, Adam but the Escoffier Cookbook is NOT "Le Guide Culinaire" or "A Guide to Modern Cookery".
The original edition from Heinemann in London was out of print for a long time but it is now available again, both from Amazon & Barnes & Noble.

It does not come up if you search for Escoffier since it is filed under the translators name "Cracknell" dumb, but oh so true.
The same book is also available at amazon.com but is $ 65.- (sorry, George but I can't afford to shop at designer boutiques)
The Escoffier Cookbook you can buy new for & 11,- but is not worth the paper it's written on. The translation is ludicrous. Cracknell and Kauffmann, both chefs themselves got the gist of what old Auguste was trying to convey to his readers in "Le Guide Culinaire" or the Complete Guide to Modern Cookery.
While I have not seen the new book myself (no need to update the old one) I'm sure they have not messed much with the original, except maybe a few pictures, here and there. People will not buy cookbooks without pictures.
