Apprenticeship or college?

I am a 21 year old currently working in the industry.
I have 7 months experience now and the restaurant
I am currently working at has recently joined with the
apprenticeship program. I had planned on attending
SAIT next fall, but the executive chef at my restaurant
is trying to convince me to apprentice. what should I
do? This restaurant has the potential to be one of the
best in Western Canada, and the chef is excellent, but I
haven't been able to hear an unbiased opinion. I am
also fluent in French and have thought about
apprenticing in France. Could someone please offer me
some suggestions as to what I should do.
