theres only so much baking to know, then it becomes micro analysis.
My apprentice quit J&W after one year and he's a quick learner, he thinks any longer than he went would have been a waste.
If he's in with a good chef he ought to play it out for all its worth then move on, a couple yrs here and there and he should be well rounded out.

If it were me I'd go for some business schooling....and keep baking full time.
