Sharon........I read your response to Chuck on 1/18 and would like to chat with you. I am 41, have a BA in Business Mgmt, working in the corp world and considering a career change. I bake cheesecakes on weekends and sell to friends and co-workers so am considering pastry chef programs. The local college (San Diego State Univ) is offering a certificate program that is affiliated with the California Culinary Inst in San Francisco. Am planning to start taking classes in the fall part time, and have no proffessional kitchen experience. What were some of the hurdles you faced? Did you go straight from school to the catering business or did you spend any time in the restaurant business? Any tips would be appreciated.
