E-mail me in eight years, your ears should be almost dry then.
Keep you excitement and positive attitude, you will need these
traits working 70hrs+ a week. The culinary profession is not
for the weak hearts. Knowledge and experience will come, with
all your hours and years, then one day your peers will say "Chef
I need......................." Until then read every culinary
text you can. Train with the best chefs, take business classes,
English, food writing, and the most important LISTEN first, say I
know after.
