Unfortunately if you want to be a real chef you're looking at well over 10 years with or without school.
The best age is before you are out of your teens, chefs prefer to have something they can mold into their own likeness.
But others have gone before and are happy...and thats what you're looking for yes?
You might find it interesting that many food writers don't know diddly about food, thats why they promote mediocrity.
(its another angle of creating in ones own likeness, promote through publicity those who are clueless as you and you look like an expert)
