So you're interested in coming to the CCA? Don't worry about not having done much serious cooking because about half the students who come here are in the same situation as you. A lot of people think that they'll be at a disadvantage if they come to culinary school without any experience. Sometimes it would actually work to your advantage since you haven't gotten a chance to develop "bad habits" yet. It would be easier for you to grasp more of what they teach in school since you don't have anything to contradict them with. So many students who've had 2-3-5 years in the industry come to school thinking they'll just kick ass. On the contrary, they're usually the ones getting kicked because of their egos.

Plus, you'll all start from the basics. So it doesn't really matter how much you already know because you'll go at the same pace.

One thing you'll have to remember is to keep an open mind and learn as much as you can. Several chefs have several ways of making the same stuff.....choose whatever you think is best for you. The chef instructors at school are very nice, and they're extra patient to those who don't have much background in the industry--as long as you show a genuine interest in what you're doing.

It's never too late to apply at the CCA because they have openings every two weeks. There's no set date in fall or summer or whenever that everyone should start. Have you gone to one of the tours at school? It would be a good idea for you to do so. They hold tours for visitors and prospective students every Monday, Wednesday and Friday. And if you want to talk to an admissions representative, just tell them and they'll gladly accommodate you. Their number is 1-800-baychef.
