Yes , that is unique. I would become well aquainted with the
fiscal expectations of the operation and work from there.
This person probably knows what the deal is. Hopefully
she will be professional enough to help you out by
sharing with you her experiences since she has been the chef there.
Our job, by it's very nature is one of learning. So observe
and work side by side with this chef. No different then you would in any other
instance. I am sure you can learn a lot from her before she goes.
