I think a great chef is one who can interprete and express their love for
food and the infinite combinations without being pretentious
and haughty. They can create anything working with a relatively
bare cupboard to a fully stocked professional kitchen.
They should make the diner feel special, taken care of..like
the dishes were custom made for their palette.
Their technique should come from their gut feeling about their
love of food. It should walk the fine line between love and
eroticism. The dishes should be a separate and distinct experience.
I'm not a chef, but will become one. This is what I feel
when I create a dish in the kitchen
