A while back someone was asking about an aerosol instant cold spray. I used a product for plating desserts yesterday called Choco Cold, distributed by Eurofoods U.S.A., 1-888-888-EURO. I'm not sure what the price was, but it worked fabulously. I dipped the tuile in chocolate, put it on the plate and gave it a shot with this stuff to set the chocolate. It took me no time to do fifty plates.
