Chocolate tortillas?

I'm looking to do a dessert for a southwestern restaurant. I've tried a fried chocolate tortilla and am going to try a plain tortilla with a center layer of chocolate. Any suggestions?

Try pouring some ganache into a sheet pan and freezing. Cut out strips and tuck into a flour tortilla(maybe can even add sliced bananas), seal and freeze. Deep-fry and enjoy with sprinkling of powdered or cinnamon sugar.

I'm not sure...maybe eggwash or a toothpick?? I've never made such a dessert but I thought I'd be able to give Vincent a somewhat general idea.

I was looking for ideas for a specific dessert, and I ended up going with a chocolate flour tortilla. It is fried into a shell and a fried chocolate ice cream ball is placed in it and then it is drizzled with chocolate sauce. Not my taste, but it has gone over very well at the restaurant. I'd love to hear any other dessert ideas that you'd have though.

I wish I could share with you some great ideas but I haven't done much on the southwestern theme with desserts.
I do own a cookbook that I have made several items from which were very good. It's called "Fiesta! Southwest Entertaining with Jane Butel" published by Harper & Row. She has alot of desserts for a regular cookbook. There are no photos, but it may give you some new ideas that you could explore.
