I'm looking at one source Pheif & Holing, they sell stainless steel extenders and ones that aren't labeled ss. but they don't tell you what the other is made of.
I want full and 1/2 pan extenders to both bake and use for assembling in. Would it be foolish to buy extenders that aren't stainless? There is a price difference but that isn't what's effecting my preferance. It is that the stainless only comes in 2" tall heights and I want 3" (which they have in the non-stainless only).
So what do you think....should I not buy them unless I find SS? Or the other must be decent for baking also or they wouldn't sell it as such and either would be fine?
Any thoughts or brand preferances?
We use ones that are kind of a pressed glass type.I prefer these for the price. The SS ones, once they break they are usually gone or the have to be welded. The fiberglass ones can be taped and they only cost approx. 9-10 dollars. Easier to store. They give when bent and return to their reg. position. If you are not going to be washing these by hand in your kitchen I suggest the glass ones.

For what it's worth I have and use aluminum extenders. In a past life I used a stainless extender and to tell the truth I never thought about it until now meaning I never noticed a difference.

Panini I haven't seen anyone selling pressed glass extenders at all....are these something your currently able to buy? I can't really picture what pressed glass (like fiberglass?)looks like and how you can bake in it?
The bending problem makes sense but I wasen't aware of any other options.
So if I can't find the pressed glass type then cheap is the way to go since they might break easily.
P.S. I kind of don't want to buy anymore equipment I have to wash myself or baby sit with the guys.
P.S.S I bought a really nice three tiered polished aluminum cake plate just last winter (the kind that sell for $500., although I got it way cheaper)...busy night... dishwasher who knew better/forgot and he put 1/2 of it thru the washer. RUINED INSTANTLY! If it's not one thing defeating you it's another!
They are like off white fiberglass. They are common in the industry.

FYI make sure the the metal fastener and the rivits are made of SS, especially if your going to soak them. That's about right on the price, I wouldn't go any higher.

It's hard for me to understand why all this stuff is not at you finger tips being so close to a city that is known for it's baking.Maybe you should drop down a notch and start calling the purveyors that handle the donut, and ma and pa type bakeries.You might have better sucess and probably better prices.

Actually the metal parts on mine look like about 1/8"-3/16" thick aluminum."No Rust"
By the way.. It was a challenge for me to find these a few years ago also. A search on the internet revealed Catalog Sales Division. Once you get their catalog it is like the grocery stores use in their bakeries. Shows different cake patterns for air brushing and just about anything alse a baker could want.

W., I prefer the fiberglass types too. I get them at our local restaurant supply stores, cheaper than ordering it through Cysco or Rykoff.
I've been rather pressed for time lately and haven't really looked outside of the catalogs I already have.
I hired an assistant yesterday, finally...Boy do I hope she works out! She's spanish, so that will either be great and a wonderful help or she'll wind up killing me...time will tell. Cross your fingers for me, please?

Great story to share....we had our big Shore dinner last friday night. It's a rather formal season opening event. Well in the middle of the dinner rush (before dessert)I came down with food poisoning. Never had that happen before on the job in the middle of an important event,EEK!!!!!!
What can you do? Nothing much...after what seemed like hours (but wasen't) stuck in the employee batheroom I left. I've yet to hear how things went (I was out the next day also).
This is a very frustrating thing when chefs don't cross train or take interest in their total kitchen. He didn't even know my menu, yet alone how to heat or plate any of the items. (Don't worry go home), are 4 words that scare the heck out of me (more than driving for an hour sick)!
I called Catalog Sales Division today and was told something rather unusual. They told me they have a new policy as of April past where they aren't accepting any new customers. They are to refer new clients to Deco Pac. Isn't that wild!!!! She wouldn't give me any more details...I asked it they were going out of business etc...she said no, but nothing more to explain such a crazy move.
Deco pac doesn't sell extenders or much hardgoods...that doesn't seem like a good referal, da!
So any other leads where I could buy fiberglass extenders?

Well, who would guess a company would have such a strange event going on?
Pfeil & Holding (something seems wrong about that spelling) they only carry the s.s. and the unknown metal ones I mentioned at the beginning of this thread. How far can I take this....I need them shortly, I've tried, but I need them so I guess I'll see how long the metal ones last.

E-mail me with the address of your club and I'll get them tomorrow and ship them. They are light, it should be cheap, I can even next day if you want. Do you want the 2" or 3"? There is a little V in the corners. There is two different school of thought here, I turn them down, most turm them up. I prefer the batter to run alomg the sides for even baking.
